Supervise and participate in the planning, requisition, preparation, cooking and serving of many varieties of food aboard the Duke University Marine Laboratory Research Vessel.
Supervise and participate in the requisition, inspection, storage, preparation, cooking, portioning and serving of meats, fish, fowl, vegetables, cereals, soups, fruits and other forms of food aboard the Marine Laboratory Research Vessel.
Schedule and assign work for the group ensuring proper distribution of assignments and adequate manning, space and facilities for subsequent performance of duties.
Plan menus and ensure adequate food supplies for duration of voyage; maintain necessary food production records; make changes in recipes and cooking methods to improve quality of foodstuff.
Supervise cleaning of galley, messroom and associated equipment.
Maintain proper discipline of galley personnel.
Perform other related duties incidental to the work described herein.
