Occupational Summary

Coordinate, supervise and participate in a variety of activities of an assigned unit of a Duke University Food Service operation.

Work Performed

Coordinate, supervise and participate in the activities of an assigned unit to include food preparation, food service, sanitation of equipment and maintenance of facilities.

Receive and consolidate requisitions from subordinate personnel for supplies, equipment and additional food items; requisition supplies, equipment and additional food items as needed to maintain necessary levels of service and proper portions of food for each meal; participate in physical counts and maintain inventory control; ensure supplies, equipment and food items are properly received. Make periodic and regular inspections of assigned unit to observe quality of service and to evaluate appearance, temperature, taste and quality of food; regularly monitor activities of assigned personnel in regard to job performance and compliance with standards, including, but not limited to, food production and handling, sanitation, safety, security, cash control and employee hygiene.

Maintain accurate posting of daily menu in assigned unit via menu boards and distribution of week-at-a-glance menus. Work closely with the managerial personnel to ensure proper service and quality of food; notify of food shortages, spoiled food and equipment breakdowns and otherwise keep supervisor informed at all time through oral and written reports; operate unit in absence of management. Plan and schedule work for the group, ensuring proper distribution of assignments and adequate manning and facilities for performance of duties.

Implement DUFS policies and procedures; advise food service personnel of changes in policies, operating procedures or practices and instruct personnel in new procedures; train new personnel as necessary; keep abreast of new and changing techniques in the field of food services.

Recommend various personnel actions including, but not limited to, hiring, performance appraisals, disciplinary actions, promotions, transfers, vacation schedules and terminations; hear grievances at the first step in the formal grievance procedure.

Perform other related duties incidental to the work described herein.

Required Qualifications at this Level

Education/Training

Work requires the ability to provide supervisory coverage to food service functions generally equivalent to a high school education.

Experience

Work requires three years of experience in food and beverage service.
