Occupational Summary

Perform routine food service tasks and manual work under immediate supervision in support of Duke Marine Lab Dining Service operations; operate dish machine; wash pots and perform heavy cleaning duties; transport equipment, food, supplies, and refuse as directed. Perform a variety of tasks in preparation, service, and delivery of food products. Function as a cashier as needed.

Work Performed

Transport food or supplies to serving areas; ensure that areas are properly set up; assemble and replenish food, supplies, and equipment as required; ensure proper temperature of food in steam tables and correct counter display; take orders, portion and serve food to customers; record portions served according to procedure; remove, covers, wrap, label, store, rotate and discard food and condiments as directed. Clean assigned areas following proper sanitary procedures; sweep, mop floors and vacuum rugs and carpets in assigned areas as needed.

Clear soiled dishes and refuse from tables in the dining hall; scrape refuse into garbage containers; remove and dispose of trash: set up and operate dish machine, clean and maintain dish machine; clean and sanitize assigned areas; wash pots, pans and equipment, collect, sort and dispose of trash; follow all safety procedures for using equipment and chemicals.

Maintain sufficient stock and supplies for the proper performance of duties; unload incoming supplies and equipment; unpack and assist in receiving, issuing and transporting materials; verify quantity of received goods against invoices and notify supervisor of discrepancies; stock supplies and equipment in accordance with prescribed procedures; assemble supplies and deliver to ordering unit, using hand truck if needed; report needed items for reorder.

Operate point-of-sale cash register; calculate total cost of items and accept payment in cash, on meal cards, or on charge cards; perform other various clerical duties in food services offices as required; provide customer service as needed.

Operate and monitor the proper functioning of food service equipment; follow all safety procedures for using equipment and chemicals; clean and sanitize equipment after use.

Assist in the preparation of foods such as meats, vegetables, baked goods, and desserts; prepare foods to include beverages, salads, dressings, sandwiches, and cold plates.

Prepare, transport, set up, and serve food items for catering functions as needed; maintain an accurate inventory of all catering equipment and food items consumed.

Required Qualifications at this Level

Education/Training

Work requires the ability to read and follow instructions normally acquired through partial high school education.

Experience

Work requires six months of food service experience. (Completion of high school does not offset required experience.) OR An equivalent combination of relevant education and/or experience.
