Occupational Summary

Assume lead responsibilities for small independent unit or assist in running the day to day operational activities of larger Dining Services unit; evaluate staffing needs, train, and monitor employee production in accordance with departmental standards and practices; control daily cost and recommend changes to management; monitor and participate in a variety of food service activities to include the job duties of lower level employees.

Work Performed

Assume operational responsibility for small food service unit; ensure opening and closing of unit in accordance with established standards and times.

Monitor employees on a daily basis to include training on proper food handling and service procedures; coverage for absent employees; recommend schedules for employee breaks and provide input on the handling of day-to-day operational issues.

Determine food and supply levels for unit; monitor operation of equipment including cooler and hot box temperatures, POS system, lighting etc. Notify manager of needed repairs promptly.

Handle daily cash outs and cash deposits including helping manager investigate any cash variances.

Oversee and operate point-of-sale cash register; calculate total cost of items and accept payment; prepare cash drawer for deposit.

Monitor the set- up and operation of food production equipment to include but not limited to slicers, mixers, dicers, vegetable choppers, ovens, grills, fryers, broilers, steamers and other bakery and meat processing equipment; ensure equipment is cleaned after use.

Ensure the proper set-up, display and serving of menu items to dining service customers; providing professional and courteous service.

Oversee the preparation of the grill and fryer items, breakfast foods, hot and cold sandwiches, pizzas, vegetables, bake desserts and breads or other food items requiring simple steps and procedures; monitor and observe food during cooking process; regulate temperatures and/or timing of cooked foods as appropriate; ensure final product meets standards.

Ensure compliance with all safety procedures for using equipment and chemicals; ensure handling of all food products in accordance with recognized safe food handling practices.

Ensure the cleaning and sanitizing of assigned areas following proper procedures.

Perform other related duties incidental to the work described herein.

Required Qualifications at this Level

Education/Training

High School Diploma or GED required. Work requires the ability to read and comprehend basic instructions and write basic reports.

Ability to work as a team member. Ability to follow oral and written instructions. Ability to work with minimal supervision. Appropriate interpersonal skills which includes clear communication and courtesy towards students, families and co-workers.

(Must have no disciplinary actions and must meet or exceed overall expectations on the department's development plan.)

Experience

Work requires at least two years Dining experience.

OR AN EQUIVALENT COMBINATION OF RELEVANT EDUCATION AND/OR EXPERIENCE

Skills

Must possess strong leadership, planning, organizational, problem- solving and communication skills.
