Occupational Summary
The Associate Director for Residential Dining is responsible for overseeing the day-to-day operations of the Marketplace Residential Dining program on East Campus. This role will play a key strategic role in fostering a world class dining experience for Duke Students and stakeholders through ensuring the effective collaboration and management of the Front of House (FOH) and culinary teams. As the first college/university dining program in the country to receive FARECheck Gold Status for an entire facilityby the Food Allergy Research andEducation organization, this role will also play a key role in ensuring strict adherence to policies and practices related to ensuring food safety and maintenance of the Marketplace FARECheck Gold Status. Delivers an exceptional dining experience in the operations, centered on culinary excellence and prompt, friendly service. Treats every customer in the dining hall as a valued guest, ensuring their experience is exceptional
Work Performed
Oversee daily food service operations including staff management and/or customer issue resolution for the Marketplace, Trinity Caf?? and the Freeman Center Caf??.
Ensure customer satisfaction and achieve Duke Dining service goals by engaging directly with customers as well as resolving customer complaints and concerns.
Actively manage dining facilities and service areas, to ensure environments are well maintained, clean, comfortable and engaging to consistently support an exceptional experience for dining guests.
Perform regular planned and unplanned inspections of Front of House (FOH) stations and food preparation areas to identify areas requiring improvement, initiate corrective actions, and monitor corrective action statuses until successfully completed.
Staff Supervision and Leadership
Directly supervise the Assistant Director for Dining Services responsible for FOH Operations and the Executive Chef responsible for Culinary Operations of the Marketplace, Trinity Caf?? and Freeman Center Caf??.
Exhibits strong leadership abilities and sound judgment. Proficient in training, supervising, and assessing the performance of team members. Capable of creating and delivering both formal and informal training and development programs
Fosters a collaborative and supportive team culture that promotes open communication and encourages employee engagement.
Develops, implements and oversees workflow components, and assigns and coordinates the day-to-day activities of food service staff.
Keep theDirector for Residential Dining advised on personnel issues. in conjunction with the Director for Residential Dining, maintain liaison with Student Affairs Human Resources, as well as Staff and Labor Relations regarding personnel problems, issues and special requests and to facilitate personnel actions.
Serve as the day-to-day point of contact for Dining Employees and lower- level managers, working to address issues and concerns as they arise Coordinate recruitment, screening and interviewing of applicants for departmental positions in alignment with applicable recruitment and bid processes; assist management with salary budget planning and staffing requirements.
Develop and implement a comprehensive and ongoing training and development plan for all levels of staff.
Direct various personnel actions including, but not limited to, hiring, performance planning, disciplinaryactions, terminations/discharges, transfers and vacation schedules; consulting with the Director, as needed.
Food and Dining Safety Management
Regularly inspect all areas to ensure that all standards for food safety and FARECheck certification are being met.
Implement regular training and development related to the identification and management of food allergens and contaminants for all levels of staff.
In collaboration with the Duke Dining Nutritionist, develop and maintain processes and practices that ensure the accurate identification, labeling, storage, and handling of foods with potential allergens to prevent cross-contamination.
Regularly review menus, dining food labels and ingredients to ensure accuracy.
Collaborate with the Duke Dining Nutritionist to address student concerns related to food safety and allergies.
This individual identifies work unit needs and contributes to the development of unit processes and procedures.
Maintain liaison relationships and meet regularly with Bargaining Unit Stewards and Leadership, as directed.
Manage the operations of DukeResidential Dining/Self-Operations in the absence of the Director.
Assist the Director with the management and oversight of the various Residential Dining Service staff related budget lines, as well as the development of short- and long-term staffingplans.
Manage the usage of dining facility spaces, to include online space approvals, coordination with/of on campus service providers, room and support service readiness, as well as post event actions and billing.
Required Qualifications at this Level
Education/Training
Work requires communications, organizational and food production management skills generally acquired through completion of a bachelor's degree program with major concentration in food preparation management, nutrition or related field.
Experience
Work requires six years of experience in a food production or related area to acquire skills necessary to manage a large, high volume food service area composed of numerous and varied cost centers. University Dining Operations Management experience strongly preferred
