Occupational Summary

Develop, plan and manage all aspects of a self operated residential dining program for first year students with sales of approximately $10M/year. Oversee assigned administrative functions i.e., CBORD with emphasis on planning, implementation and/or development of innovative operating policies, procedures and practices to ensure effective operations, department financial stability, and high student satisfaction. Lead, direct, and inspire a Dining team focused on great food and great service, every meal, every day. Provide departmental leadership in the absence of the Executive Director.

Work Performed

Lead a team comprised of managers, chefs and bargaining unit staff focused on great food and great service.

Manage various personnel actions including, but not limited to, hiring, performance reviews, promotions, transfers, disciplinary actions, terminations, overtime, and vacation schedules.

Collaborate with the Executive Director on strategic and operational planning and goal setting using comprehensive operational and financial analyses of existing operations and future opportunities to create a world class dining operation that not only serves great food, but supports Dukes vision of community for first year students.

Provide day to day, hands on management of the Marketplace, Trinity Cafe, and Freeman Center dining operations emphasizing: customer service; high standards of food preparations, presentation and service; innovation and excitement; staff accountability; compliance with bargaining unit contract; HACCP compliance; training and professional development.

Develop and monitor the residential dining budget.

Oversee financial processes to ensure operational accountability.

Prepare capital plan for residential dining.

Oversee point of sale and cash management for residential dining.

Manage department processes and functions including, but not limited to CBORD, maintenance and repairs, and purchasing.

Serve as departmental liaison to bargaining unit representatives and employees with emphasis on strengthening working relationships, reducing labor costs through improved productivity, improving quality of work and creating opportunities for employee career development.

Represent management in employee grievance hearings.

Develop standard operating procedures (SOPs) for all areas in residential dining.

Establish quality and service standards for in house special events, summer camp programs and other areas as needed.

Develop and implement training programs.

Serve as the primary departmental liaison to various University departments such as University Housekeeping, FMD, and Conference Services.

Provide departmental leadership in the absence of the Executive Director.

Required Qualifications at this Level

Education/Training

Work requires communications, analytical and organizational skills generally acquired through completion of a bachelor's degree program.

Experience

Work requires at least seven years experience in food service business, financial and operational management or an equivalent combination of relevant education and/or experience.

Skills

Demonstrated commitment to customer service Familiarity with food information systems Experience in facilities management/renewal Ability to work collaboratively with diverse internal and external constituencies Strong administrative and managerial skills
